One of the most important things we learned
at Scoop School was how to clean - and we
spend a lot of time keeping things clean.

Two machines contain a total of nearly 100
separate parts. Every night the machines are
thoroughly flushed out and rinsed. We then
take them apart and scrub each part by hand
with warm, soapy water, then rinse and
sanitize each part. We also scrub, rinse and
sanitize eight dipping buckets, the dipping
cabinet and the lids. Everything is laid out to
air dry.

In the morning, we put the machines
together, then run a sanitized water solution
through each barrel.

We keep a lot of scoopers on hand - of every
size - so we can grab a clean one whenever
we need one. The scoopers are washed
throughout the day by hand in warm soapy
water, rinsed in warm water, then sanitized.
Each scooper is used for only one flavor,
until it is thoroughly washed, rinsed and
sanitized.

And we both keep an eye out. If one of us
misses a spot, the other is sure to  point it
out !

If you want to see recipes that read like
formulas, look for frozen custard recipes

Although we are both critical tasters, Ed is
the one who researches all available
methods of making a particular flavor and
tracks down suppliers able to provide the
freshest ingredients to build the right flavor
profile. Then he measures, mixes, runs the
custard, tastes, tweaks, measures again,
mixes again and tastes again.

The foundation for all flavors is "the mix,"
gallons of frozen custard mix, delivered
from the dairy with the right blend of milk,
sugar, butterfat and emulsifiers to produce
a rich, creamy, frozen custard that
showcases any flavor we add to it.

Vanilla Bean is the reigning queen of any
frozen custard shop. World-wide, vanilla is
the most popular flavor. Additionally, vanilla
is the base for flavors like Cherry Vanilla,
Broad Street Crunch, Chocolate Chip,
Cookies & Creme, Guppy Chow and many
others. So, we put a lot of work and a lot of
research into our Vanilla Bean frozen
custard. Our customers have described it
as "Awesome!" "Amazing!" and "Honey,
come here. You have to taste this."

Our chocolate is equally the best you'll
taste anywhere, with a blend of two
different chocolates that provides a
smooth, bold frozen custard flavor.

Other flavors are made with simple
ingredients added to the mix in a precise
ratio, developed for excellence and
consistency.  

All of our mix-ins and toppings have been
tasted and tested for flavor in
fresh-scooped custard as well as
pre-packed pints and quarts.

You won't see a big delivery truck pull up in
front of our shop. We have many different
suppliers for various ingredients. We shop
and order wherever we can get the best
ingredients.

It all works together to bring you and yours
delicious, creamy scoops - and the best
sundaes, milkshakes and floats in Central
Pennsylvania!
